Tag, You're It! : 11 Things

Brittany from Life of a Bama Girl added me to her list of people to post 11 random things about myself and answer her 11 questions. So here we go!

11 Random Things About Me:

1. If I had to have a favorite food, it would so be bacon.

2. I have serious anxiety about cooking which is why I'm obsessed with using recipes.

3. I'm addicted to watching Hannah Hart videos on YouTube.

4. I hate waking up early. In middle & high school I would sleep on top over the covers in my clothes so I would save time and not have to make the bed or get dressed.

5. I have probably used an iron a total of 5 times in my life. 

6. I can't stand talking on the phone. I will text you 5,000 messages before I call.

7. My parents lived together pretty much from the time they met and are still married. My husband and I lived together after dating about a month.

8. I'm addicted to massages. If anyone asks me what I want for a gift for ANY occasion, the answer is usual a gift card for a massage.

9. I can't keep myself from reading the comments people write on articles on Yahoo even though half the time they infuriate me.

10. I have broken 7 bones, a couple of them more than once and all on separate occasions. (arms, leg, ankle, hip, shoulder, even cracked my skull). 

11. Before I went in to dietetics, I was a business major and wanted to be a Creative Director.

1. Do you prefer summer or winter clothes?
geez, this is hard. I think I would say winter clothes because I love jeans.

2. What are your top 3 favorite books?
I'm going to pick 4 because I'm a bad rule follower. ;)The Perks of Being a Wallflower, The Help, The Hunger Games, The Lovely Bones.

3. What is the last movie you saw?
The Help, loved it! But of course the book was better.

4. If your house caught on fire what are the 3 things you would grab first? (Besides pets and people)
Matt's violins, my Jewelry & my mac 

5. What is your all time favorite thing to cook?
Anything I don't screw up! This is not a joke. 

6. If you could travel to anywhere in the world where would you go?
Europe, all of it! haha. Does that count? I've been a lot of places but no where in Europe. 

7. What do you like to watch on tv?
haha, should I really say this? I love trashy tv like the Real Housewives but I also like watching anything involving food, I like Chopped right now.

8. What is your favorite holiday and why?
St. Patricks Day! Hands down. 

9. What type of food (Greek, Mexican, Japanese, etc.) is your favorite?
It's a toss up between Japanese and Indian.

10. If you could go back to high school and/or college and do it all over again would you?
Oh man. All of it?? High school? That's a big no! I broke a million bones as a cheerleader in high school. College? Heck yeah! Who doesn't love college?!?! Best time ever.

11. What is something you have learned after graduating high school and/or college that you wish you knew while you were still in school?
Going to lab is important...

Death by Pizza & Orlando Philharmonic

I want to thank the lovely Jenn @ Peas & Crayons for hosting this weekly party! Linking up with WIAW is one of my fav parts of the week. So go over there and check out all the fun!


In honor of Jenn celebrating veggies, I'm gunna answer an couple of her questions. My favorite veggie right now is Brussels sprouts. I can't get enough of them lately. But I would say cauliflower is a close second mainly because I find so many different ways to use it. My fav way is to use it as a rice substitute. Cauliflower is kind of awesome. I always make a big effort to eat plenty of veggies everyday. If I don't really know what I want, like tonight, I just grab a bunch of random veggies I have on hand, throw them in a pan and it always turns out yummy! You really can't go wrong with vegetables. 

After saying all that, there really weren't any veggies in this wiaw...other than potatoes, tomato sauce (does that count?) and mushrooms, which are technically a fungus. What can I say, I was on vacation. 


This was our last full day in Orlando. So sad. :( But it was a great day! I only ate two meals. Matt had an earlier rehearsal so we stopped at Ihop for breakfast. 

Breakfast: hash browns, eggs, bacon, sausage.
Ahhh! Splash Mountain! One of my favorite rides at Disney. We don't ever buy these pictures because they are waaaay over priced. Instead, Matt takes pictures of the picture on the screen. ;) hehe.


Oh goodness. So this is what happened... According to Matt, he has been dying to go to Giordano's for a YEAR. If you don't know what Giordono's is, it's that famous deep dish Chicago style pizza. I believe they only have them in Illinois and Florida. Anyway! The last thing I wanted to do was eat any wheat. But I finally gave in and we went.

Worst idea ever!!! blah. I'm not gunna lie, it tasted good, but I was sick for the next 24 hours after eating this one slice. Learned my lesson! Matt obviously ate the rest.

So the real reason we even went to Disney was for Matt to play with the Orlando Philharmonic Orchestra. The show was Saturday night and it was so incredible! Sold out, over 2,500 people there to watch my hubby play! Ok... so not just him. ;) Regardless, it was one of my favorite shows I've been to. They played Beethoven: Symphony No. 6 “Pastorale”  & Stravinsky: The Rite of Spring.

More Disney Deliciousness

Breakfast? Ok I'm not sure coffee counts as breakfast but it's all I had before lunch. I rarely drink coffee but sometimes I get cravings for it. I sat on our back porch at Old Key West, worked on my blog, watched the golfers and drank my coffee until Matt woke up.

Then we headed off to Downtown Disney to find some more food and SHOP! Matt just haaad to go to Earl Of Sandwich so I found a yummy salad there, and soup. It doesn't look that big in this picture, but this salad was huge!!

Earl of Sandwich Cobb Salad: Grilled Chicken, Smoked Bacon, Swiss & Cheddar Cheese, Field Greens & Romaine, Roma Tomato, Cucumber, Cranberries & Buttermilk Ranch Dressing.
My soup came with croutons so Matt ate them. ;)

I told you yesterday I loved Sushiology so much we went back again.

We did a little shopping at Downtown Disney and got some different types of sea salt and green teas. Ok I'm seriously wanting that salad again now! ...and sushi. ;)

Nom Nom Disney

I LOVE Disney World!!!!! :) But seriously, who doesn't?? Now, did I stick to 100% paleo while I was there? No. Did I try my best? Yes. Then only redeeming quality about leaving Disney to come home is that I can control what is in my food again. That's a good feeling!

I wanted a giant turkey leg SO bad but they didn't open until 11:00 and I just couldn't wait. So instead I opted for the bbq sandwich plate and ditched the bun. 
Breakfast/Lunch: 1 banana, bbq, french fries, sauteed mushrooms.
There are a lot of fun things about Disney and even more food. But no matter how many times I go or how many different foods I try, the Pineapple Dole Whip is my all time favorite! Pineapple soft serve in pineapple juice. I could eat these everyday! Oh, and in case you didn't notice my shorts and t-shirt, it was in the 80s!!

We went off Disney to check out this sushi place called Sushiology. The prices were great and the sushi was surprisingly delicious! We were so impressed we went here twice!

Around 11:00pm we headed over to Pleasure Island at Downtown Disney and split a bottle of wine at Paradiso 37.

Liebster Blog Award!

Just when I thought this week couldn't get any better (Seriously does it get better than Disney??) It DID! I received my very first blog award!

Liebster is German and translates to the English word
"dearest"or" favourite". It’s meant for up-and-coming

1. Alex is a close friend of mine who is a couple months from finishing her Masters in Nutrition from Alabama ( Roll Tide!) and starting her Dietetic Internship this fall. 2. I had an instant connection with Tiffany's blog the moment I read the name. haha. I don't cook but my boyfriend does. My first thought was, I don't cook but my husband does. ;) Well, she may not cook, but I promise you, her boyfriend sure does know his way around a kitchen!

3. I keep finding myself at Kelsy's page. This girl loves to bake but does it gluten free! Well I really couldn't ask for more! Not eating gluten myself, this is one of my favorite places to find new desserts!

4. Jennifer is my sister-in-law and the most talented cake artist I know! I mean, every time I see her stuff I'm amazed even more. It's truly art! Which makes me not want to eat it because it's too pretty!! haha. She also made our wedding cake and not only was it beautiful, but it tasted like heaven. Her blog is VERY new, so give her some time. 5. What can I say about Anna. I wish I was her right about now! She is currently living in FRANCE, exactly, your jealous too huh? studying abroad. And as if I wasn't jealous enough...she is blogging about all the incredible french food she is eating!

Road Trip to Disney!

Yesterday we made our trip to Orlando and this is what I ate. Probably not going to write a lot because I have other very important things to be doing...like riding Space Mountain! 

Breakfast: 3 eggs and 2c1/2 slices of bacon.
Matt made venison jerky for us to take on the trip so I would have some paleo friendly snacks. :) I'll post the recipe in a few days.
Lunch: venison jerky, chicken & cheddar cheese.
Finally made it to Orlando and stopped to eat at Sweet Tomato before heading over to our condo at Old Key West. I love Sweet Tomato and we don't have one at home so I like to eat there when I'm near one.

Dinner: Clam chowder (I didn't eat the potatoes), Tomato Basil soup, sugar-free raspberry mouse made with coconut oil & grapes.
Dinner: Made a giant salad! Sooooo goooood.
Once we made it to Disney and got our stuff unpacked we headed to the hot top with a bottle of wine.

Dessert: wine & chocolate.
I Probably ate way more dairy today than I needed to...but what can I say. I'm on vacation! But I am trying my best with what I have. It's a lot more difficult when you have to go out to eat!

Pickled Green Beans + WIAW

Let me just start by saying I have never pickled anything in my life nor have I ever eaten anything pickled other than...a pickle. I'm a little afraid. But the other day I saw a pickle recipe for Naturally Fermented Dill Pickles on Mark's Daily Apple. Then, in a bizarre coincidence, my husband announced that he wanted to pickle some green beans. And so my pickling experience begins...

I sort of used MDA recipe for pickles + one from All Recipes then Matt added an extra kick with a few more spices.
First, place all spices in mason jar. We used cayenne pepper, garlic powder, Cajun seasoning,  dill and chili flakes. Next, in a pan, bring to a rapid boil: 2 cups distilled white vinegar, 1-1/3 cup water, 3 tbsp salt and 1 garlic clove. Place all green beans in mason jar then pour liquid over. Last, place entire jar in hot water (not boiling)  for at least 10 minutes to seal jar. Make sure lid is sealed and center does not pop out. If it does, you can keep it in the refrigerator. 
Pickled Green Beans: these will be ready to try in about 3 weeks. I'll let you know how they turned out!

Breakfast: 3 cheese eggs & 2 slices of low sodium bacon.
Snack: I didn't eat all that. ;) Just 1 banana.
 I ate the same thing for lunch and dinner so just one picture.

Lunch/Dinner: leftover Chicken Cordon Bleu & Brussels sprouts.
 I can't live without chocolate and wine!

Snack: a couple squares from this 85% cocoa organic dark chocolate bar & 8oz red wine.
