Pickled Green Beans + WIAW

Let me just start by saying I have never pickled anything in my life nor have I ever eaten anything pickled other than...a pickle. I'm a little afraid. But the other day I saw a pickle recipe for Naturally Fermented Dill Pickles on Mark's Daily Apple. Then, in a bizarre coincidence, my husband announced that he wanted to pickle some green beans. And so my pickling experience begins...

I sort of used MDA recipe for pickles + one from All Recipes then Matt added an extra kick with a few more spices.
First, place all spices in mason jar. We used cayenne pepper, garlic powder, Cajun seasoning,  dill and chili flakes. Next, in a pan, bring to a rapid boil: 2 cups distilled white vinegar, 1-1/3 cup water, 3 tbsp salt and 1 garlic clove. Place all green beans in mason jar then pour liquid over. Last, place entire jar in hot water (not boiling)  for at least 10 minutes to seal jar. Make sure lid is sealed and center does not pop out. If it does, you can keep it in the refrigerator. 
Pickled Green Beans: these will be ready to try in about 3 weeks. I'll let you know how they turned out!

Breakfast: 3 cheese eggs & 2 slices of low sodium bacon.
Snack: I didn't eat all that. ;) Just 1 banana.
 I ate the same thing for lunch and dinner so just one picture.

Lunch/Dinner: leftover Chicken Cordon Bleu & Brussels sprouts.
 I can't live without chocolate and wine!

Snack: a couple squares from this 85% cocoa organic dark chocolate bar & 8oz red wine.

  1. I've heard of pickled green beans but have of course never tried to make them. Congrats on being brave enough. They do look good!

  2. I love pickled green beans! I pickled some jalapenos the other day, and now I've been fiending for some spicy crunchy pickled green beans. Do let us know how they turn out!
