Paleo Pizza!!

I have been wanting to make a paleo pizza since...well, since I started eating paleo! I finally picked up all the ingredients to make this recipe so today was the day. (I found a huge bag of flaxseed meal at Big Lots for $4!! It's usually $9). I have seen a few different recipes and I'll be sure to give the others a try to as I am curious. But for now, this is the one I'm eating. I got this recipe from Ben Kreps. The only difference is he was a good boy and added lots of veggie to his pizza. I promise I will next time!! I just was so excited to make this I forgot to buy extra veggies.


This crust is supper easy to make into any shape you want. Wish I would have known on Valentines day! Heart shaped pizza???
This is what my crust looked like before adding all the toppings. 
Ingredients:
4 eggs
1/2 cup of coconut milk (or full fat milk)
1/3 cup coconut flour

1/3 cup flax meal
1/2 tsp baking powder

Add any spices or flavors you’d like to get a tasty crust.  I personally add:
1 tbsp oregano
1 tbsp basil
garlic powder (Ben didn't give an amount so I added 1 tbsp)

Instructions:
Mix wet ingredients in a mixing bowl, or kitchen aide if you have one. In a separate bowl mix all dry ingredients. Ben said he sifted them, but I don't have a sifter-still turned out fine. Then pour dry ingredients in to mixing bowl with wet ones and mix until you have sort of a pancake batter consistency. Pour batter on to parchment paper in to your favorite pizza shape. Cook crust in oven on 350 for about 20 minutes, flipping at the 15 minute mark to make sure it cooks evenly. I think I ended up keeping it in an extra 5 minutes just because I felt like it. While it's cooking, prep other ingredients. Since I added mushrooms I sauteed them in a pan with olive oil. I also made my own pizza sauce. Take the crust out of the oven and add all toppings then place back in the oven on broil until it looks delicious! EAT!

I ended up making a second pizza and just brushed on some olive oil half way through and cooked it longer on 400 to make a crispier crust.

    1. YES!! It tasted awesome! Probably because of all the oregano, basil and garlic. And I liked it cooked longer so it's crispy.

    1. This was my first attempt at pizza but I think I may try to do an almond flour pizza sometime just to see the difference. And you're so welcome! :)

  5. YUM! I love the video too and am so intrigued to give it a go! E and I love pizza so this would give us an option away from the normal crust!

    1. If you make it I would definitely recommend cooking the crust on 400 for longer than 20 minutes and brush some olive oil on both sides a couple times and flip. I made another One yesterday and it turned out even better. I should probably cool it on the pizza for a bit! Even if it is healthier.

    So I have a goal to start doing breakfast/lunch paleo style (and I feel like if I start telling more people, I will have to stick with it). I usually just do smoothies for breakfast and was wondering if you had a brand of flaxseed you adore or would recommend? Miss you!

    1. yay! That's exciting! :) You'll have to keep me updated on how it's going. I use Bob's Red Mill brand for most stuff like that including flaxseed meal, coconut flour and shredded coconut. They makes tons of different things. I love it and it's organic. Miss you too!!!

  7. That pizza looks amazing! I might give that a try sometime. I have to admit I miss pizza a lot. I think I might try to come up with a pizza-style salad that involves pepperoni, cheese and black olives over lettuce. I just can't think of a dressing. Maybe I could come up with something creamy and cheesy.

    1. I saved a pizza dip on pinterest that looks amazing. I don't remember what's in it off the top of my head though. You should try this pizza recipe though, it really is surprisingly tasty. I can't wait to make it again.

  8. i'm excited to try this tonight, though i'm going to pour the batter on a heated pizza stone instead of parchment paper and will go ahead and do 400 degrees at a longer cooker time ;)
