What Laura & Her Puppy Ate Wednesday

I tried my hand at making pizzas this week with all paleo ingredients. It turned out pretty awesome! I ended up making them two days in a row and even ate some for breakfast. ;) You can find the recipe here.
Breakfast: Couple slices of homemade paleo pizza.
 I cooked some chicken a few days ago for dinner and had some leftover. I threw it in a salad with some cucumbers, tomatoes, kalamata olives, feta and homemade Greek dressing.

Lunch: Greek Salad
 I found this water at the store the other day so I figured I'd try it out to try something different. It was pretty good too.
Strawberry Natural Flavored Carbonated Italian Mineral Water 
Snack: I actually ate a handful of raw almonds but forgot to take a picture... so here is a picture of some walnuts. ;)
If you normally read my blog, you probably know I'm kind of obsessed with these Spiced Peach Pork chops. I think I even had them last Wednesday! I love simple recipes that taste amazing and that's exactly what this is. So! I made it again last night and am pretty excited that I have a bunch of leftovers for some lunches.
Dinner: 2 pork chops with peaches.
I made a side of steamed broccoli with butter to go with my chops. I love broccoli simple this way.

 When I got home from work, this is what I found. Apparently Penelope got bored and decided to eat half of her doggie bed for dinner... Then she was all, but momma I love you. How could you be made at that sweet face???

 You know I love my wine and chocolate... and then I read this article on MDA about why you should eat MORE dark chocolate!! Just what I needed to hear. He is fueling my addiction. ;)

Dessert: 85% cocoa dark organic chocolate and red wine.

  2. I'm very intrigued by the Paleo diet but feel like I could never stick to it! Lol :) What kind of crust did you have on your pizza??

    1. I felt that way too at first. It took me a year of researching it and motivating myself before I finally jumped in. The recipe for the crust is on my recipe tab. But it believe it is coconut flour, flax meal, eggs, coconut milk, baking powder, garlic powder, oregano and basil. It's really easy.

  4. Wow, that pizza looks great! Homemade pizza crust is to LIVE for...especially for breakfast. I agree with you that steamed broccoli the simple way is so good. I could eat it all the time (and do! haha).

  10. I really need to try paleo pizza. Especially because it is lent and all E will eat is pizza on Friday. Ugh!

    1. haha what did you give up for lent? I was actually just telling someone I think I may make this again this weekend. I REALLY like it.

    2. I decided not to "give" anything up this lent. Instead I am trying to say a daily prayer for someone/something etc. But E is heading out of town soon so I may need to experiment with this!
